This happens regularly at Simbambili, but such is the chef's ability to diversify that he sometimes cannot name the exact ingredients or measurements used in a particular recipe. On a whim he may add a new spice or other ingredient to a long-time favourite and so a new dish is born. Perhaps that is how he came about his sweet potato dish laced with honey, brown, sugar, sweet chilli and cinnamon.
